I am only a month (or so) behind on sharing this, but I am so excited to finally bring it to you guys! I have made it more than once so I have options to share and which way I prefer. My Type A won't let me share until I have "perfected" it. Yes, I am working on that lol! Here is my favorite way, with options! Make it to your own liking and let me know what you think.
It's been quite a while since I have been able to have yogurt. And it's been even longer since I have been able to find a yogurt that I actually like. There are tons of commercial coconut and even almond yogurts available, but they never quite suited me. They were either too coconut-y tasting, or full of sugar and ingredients that I wasn't too happy with. So, instead of settling, I decided to finally make my own. This after the convincing of my Mom to make it because it would be clean and cheap. She was right! This turned out SO O'Mazing and it was SUPER affordable! I searched around and found this great recipe from Delicious Obsession, I made just a few substitutions. To see the OG recipe, click on the link above.
What I love the most about this yogurt is it's texture and it's taste. It is thick and creamy, and the vanilla is just enough. The vanilla won't overpower anything, so if you want to add some flavor to it, the flavor you add will totally stand out. Ok, enough of the description, my mouth is already watering for it as I type. So let's dig in, shall we? (Quick note, this recipe is not vegan, but can be quite easily.)
2 cups organic raw cashews (soaked overnight and drained until water runs clear)
1/3 cup organic medjool dates
2 cups warm water
2 tsp grass fed gelatin, I use this brand (omit for a vegan option*)
1 tsp himalayan sea salt
1 tsp vanilla extract
2 15 billion probiotic capsules (dairy free/vegan) add more or less to your liking
Place soaked cashews and 2 cups of warm water in blender (I use a Vitamix)
Blend until smooth
Add in the dates, blend again until smooth
Slowly sprinkle in the gelatin and blend to combine (you may add it to a bit of water first)
Add in the vanilla extract, salt and probiotics
Blend again until smooth
Pour into your yogurt maker, set for 7 hours and relax!
The yogurt will not be set yet, it will thicken up as it cools in the fridge. I have eaten this each time its done, warm out of the maker. So good!!!!
Some fun things I have done is to add a drop of Lime Vitality oil to it to add a zesty flavor. You could play around with any flavor you want, Orange Vitality, or actual fruit! I also top it with grain free granola for a quick snack or breakfast on the go. The possibilities are literally endless!
